Maple-Pecan Waffles
Three out of three human eaters in my household agree, Maple-Pecan Waffles {page 517} rock! Ninjahusband even said that they were the best waffles he's had in ages, and that they were his new favorites to make at home. Score!
The waffles are tender with a soft maple sweetness and a surprising chewiness provided by the pecan meal that was stirred right into the batter. Served with additional pecans, sliced banana, and maple syrup dripping off the stack, these waffles were pure perfection.
Usually with waffle/pancake batter I have to adjust the liquid in order to get a thin enough batter. Not so with these! They were perfect exactly as written. I think they would also make nice pancakes. Maybe I'll try them that way next time.
I think these waffles may become a Sunday-morning tradition. I can't imagine waking up to anything nicer.

Maple+waffles=WIN.
ReplyDeleteEspecially if you add more maple syrup and EB on top. Or maybe a little vanilla ice cream and Soy Whip? With berries?
