Spanish Rice and Beans

Spanish Rice and Beans2

I absolutely LOVE olives! I haven't met an olive that I didn't like! This is my first time knowingly having Kalamata Olives. The taste is slightly familiar.

I checked out the Spanish Rice and Beans on page 272 and it is a hit! The flavors melted together wonderfully! The meal comes together within an hour. slightly longer of course if you're cooking the beans from dry. But timewise they can end up being done about the same time since the rice mixture will cook the last hour of the beans.

The only thing I'd change is add more Olives. nom nom nom

  1. Thanks for having this blog! I'm big on reviewing cookbooks online and seeing pics of recipes before I purchase a cookbook but this might be one I need to add to my collection. I have a few questions for you though - feel free to email me the answers!

    1) are there a decent amount of pictures to recipes ratio in the book?? I would prefer pictures in any cookbook I buy - I have Mediterranean Vegan but I haven't made a single thing in it because it lacks pictures -i need to drool over recipes LOL

    2) are the ingredients relatively whole foods and can the recipes be made healthier if necessary? I.e. less oil etc. I prefer to eat relatively clean, whole foods and cut back on the oil. I love nuts & avocado tho - would rather get my fats from healthier filling sources :)

thanks in advance!!!! I almost want to buuy this based on the coconut chickpea curry recipe alone! :-p

  2. Hi Sarah,

    To answer your questions:

    1. There are no photos in the book. While all of us love photos it hasn't stopped us from being inspired by the book's recipes.

    2. There isn't a focus on "health" but you can certainly (and easily) cut down on oil and I would say that a large percentage of the recipes do use whole foods.

You might want to look at a preview here.

I personally think the book is worth the purchase as there is something in there for everyone. I buy almost every single vegan cookbook released and this one I have actually used.

    Thanks for reading!
